Montalcino is located in Tuscany, on a high hill, mostly covered with woods and wonderful landscapes. Montalcino is a municipality of 24,000 hectares bordered by the Ombrone, Asso and Orcia rivers. Therethe hill on which the city is located has numerous pedological environments, due to the formation in different geological ages. Its climate is typically Mediterranean, basically dry, with occasional continental connotations, given its position halfway between the sea and the Apennines. The rain falls mainly in the spring and late autumn months; in winter snow, fog and ice are possible. The climate is mainly mild throughout the vegetative phase of the vine, with a high number of sunny days which determine a gradual and complete ripening of the grapes. The presence on the territory of slopes with different orientations, the pronounced modulation of the hills and the difference in height between the valley areas and the more summit soils determine quite varied microclimates, even if the different areas are very close to each other.

THE VINEYARDS
Our wines come from two vineyards, Cerbaia and Bruciate on the characteristic Tuscan galestro. The vineyards are surrounded by Mediterranean scrub and grow in poor, well-structured soils with chalky soil: greyish clayey earth and clayey rock (Miocene), a soil formed by a mixture of sand and limestone; the vineyards are located at an altitude of 350 meters above sea level, facing north-west, with a warm and dry microclimate, attenuated by gentle breezes, which also guarantee more healthiness for vines and grapes. The quality of Brunello di Montalcino Cerbaia derives from the vineyard: a meticulous manual work, from dry pruning to the selection of the most suitable offshoots, from the containment of the vegetation to the trimming of the best bunches. Processes that lead to the selection of the best fruits and with a second selection at the harvest, only the perfect grapes are sent to the cellar. With this agricultural care, which includes several thinning of the grapes and light pruning of the leaves, the grapes receive more light and air, and give a limited production of healthy and ripe grapes to the right point to produce a high quality Brunello for finesse, harmony and perfume. This naturally requires hard work and considerable qualification. From these vineyards, now fully mature, we produce an annual average of 180-200 cwt of Sangiovese Grosso grapes for the Brunello di Montalcino DOCG. The planting order for the vines is 2.80 x 80 meters for the new plants, 3 x 1.30 for those of 1988 and 1989 and 2.80 x 1 meters for the next one. The training system is a horizontal with double spurred cordon; a spurred cordon pruning is carried out only for the most recent plants.
